Ingredients

1 kg Pork rolled roast
¾ cup SIDS WINE & PEPPER MUSTARD
10 slices bacon
6 strips bacon, cut in half
½ small onion, minced
12 mushrooms, large
¾ cup SIDS BROWN SEED MUSTARD

Directions

Preheat oven to 175°C.
Cut shallow slits in the roast then rub ½ of the SIDS WINE & PEPPER MUSTARD all over the roast. Completely cover with the bacon slices then apply the rest of the SIDS WINE & PEPPER MUSTARD over all the bacon slices. Cook in oven for 60 minutes until bacon is browned or internal meat temperature reaches 65°C. Meanwhile, cook the bacon strips until crispy then drain. Crumble bacon into a bowl and combine with the onion, chopped mushroom stems and SIDS WINE & PEPPER MUSTARD. Spoon the mixture into the mushroom caps and bake for a further 30 minutes.
