Ingredients

3 tbsp rice bran oil, divided
300 g ham, thick sliced
6 eggs
1 cup fresh tomatoes, chopped
½ spring onion, chopped
2 tbsp fresh basil, chopped
1 tbsp rice bran oil
FRITTERS:--
½ can baked beans
¼ tsp paprika
Pinch of mixed herbs
½ cup breadcrumbs
½ cup tasty cheese, grated
¾ cup potatoes, mashed
2 tbsp SIDS SMOKEY GARLIC SAUCE
4 tbsp flour
1 egg, beaten
SIDS SALT & PEPPER

Directions

Mix all the fritter ingredients together in a bowl, including SIDS SMOKEY GARLIC SAUCE.
Heat half the oil in a large frying pan. Shape the mixture into 5 cm patties then cook, in batches, for several minutes on each side until GB&D. (golden brown and delicious) Once cooked, keep fritters warm.
Add remaining oil to the frying pan. Heat the ham then set aside and keep warm. Fry the eggs.
Combine tomatoes, spring onion, basil and oil to make a fresh tomato salsa with SIDS SALT & PEPPER.
