Although these fish look like extras from the Alien movies, they are very tasty, although any firm fish will do.

¼ cup rice bran oil
1 large onion, chopped roughly
2 cloves minced garlic
1 bay leaf
1 small hot chilli, deseeded & sliced thinly
2 cups tomatoes, peeled & seeded
½ cup cider
1 kg firm white fish fillets
½ cup parsley, chopped
2 tbsp butter


Season the fish with SIDS SALT & PEPPER. In a stew pot, sauté onion in oil. Add garlic, bay and chilli. Stir in tomatoes then simmer for 5 minutes. Add cider and simmer 1 minute more. Add fish and parsley then simmer for 20 minutes. Remove from heat then add the butter, stirring slowly to mix.
Serve with plenty of thick, fresh bread to mop.
