Ingredients
500 g fresh chicken, coarse chopped
1 onion, fine chopped
1 tbsp SIDS TRADITIONAL PLUM SAUCE
1 garlic clove, crushed
520 g box Enchilada Kit
½ cup grated cheese
Coriander, fresh chopped
SALSA:--
2 tomatoes, chopped
1 red onion, fine diced
½ avocado, fine chopped
1 tbsp SIDS RASPBERRY VINEGAR
Directions
Marinate chicken in SIDS TRADITIONAL PLUM SAUCE for 2 hours.
Heat 2 tsp oil in a medium-high pan and quickly brown the chicken until almost cooked then set aside. Heat more oil at medium heat & cook onion and garlic until soft. Return chicken to the pan.
Preheat the oven to 180°C.
Stir in the sauce from the Enchilada kit. Heat until sauce is hot, then stir in the coriander. Put the enchiladas in the oven and heat as per the packet.
Divide the chicken filling between the tortillas then roll them up. Place in a baking dish, sprinkle over the grated cheese then bake in oven for 15-20 minutes until cheese has melted.
Serve with the salsa.
SALSA: Mix together all the salsa ingredients, including SIDS RASPBERRY VINEGAR.
