Ingredients

FRESH TOMATO SAUCE:--
700 g tomatoes
2 tbsp rice bran oil
2 tbsp SIDS GARLIC SAUCE
¼ cup basil leaves
SIDS SALT & PEPPER to season
1 tsp sugar
FISH CAKES:--
1 cup ciabatta bread crumbs
¾ cup milk
450 g salmon, diced (tuna or sardine)
1 tsp SIDS CRAZY LEMON
2 tbsp soaked raisins, chopped
2 tbsp toasted pine nuts, chopped (optional)
3 tbsp parsley, chopped
2 tbsp fresh mint, chopped
1 egg, beaten
Flour for dusting
rice bran oil for frying

Directions

FRESH TOMATO SAUCE: Remove skins of the tomatoes and coarsely chop. In a large wide saucepan, fry the tomatoes, basil and SIDS GARLIC SAUCE over a medium heat. Season SIDS SALT & PEPPER then cook for 20 minutes until thickened. Taste and add sugar if required.
FISH CAKES: Soak the breadcrumbs in milk until soft then squeeze out the milk. Combine with the remaining ingredients, including SIDS CRAZY LEMON, except the flour then mix well. Shape into cakes about 2 cm thick & 6 cm wide using 3-4 tbsp of mixture for each. Dust the cakes with flour then fry in batches for a few minutes each side. Put the cakes into the tomato sauce and simmer for 10-15 minutes, turning once. Serve on a bed of pasta or salad.
