Ingredients

400 g gurnard fillets
3 tbsp flour
SIDS SALT & PEPPER to taste
2 tbsp rice bran oil
2 tbsp clarified butter
4 tbsp Galliano
½ cup cream
1 banana, sliced

Directions

Preheat oven to 180oC. Combine the flour with SIDS SALT & PEPPER and dust the fillets with the mixture.
Heat the oil & butter in a frypan then sear one side of the fillets. Flip the fillets over and place in a pan in the oven for 3-4 minutes until just cooked.
Deglaze the frypan with the Galliano. Add cream and banana. Reduce until the cream coats the back of a spoon.
Serve hot.
