Ingredients
Tater tots
Toppings ham, sausage, orange & yellow peppers, etc
8 eggs
¼ tsp SIDS CRAZY SALT
¼ cup milk
Cheddar cheese
Directions
Preheat the oven to 200°C and make sure you grease the muffin tins really well, making sure to get both the sides and bottom. Put the tater tots in the microwave for a couple minutes to thaw.
Place 3 in each standard size muffin tin. Take a small cup and squish them flat into the bottom of each tin.
Bake the tater tots for 10 minutes. While waiting for them to cook, gather and chop up the rest of the ingredients. This example I used red and green peppers, sausage links and diced ham. Other ideas include: spinach, mushrooms, onion, tomatoes, basil, zucchini, squash, etc. Just be sure to pre-cook or purchase pre-cooked meats.
After removing your tots from the oven, lower oven temperature to 175°C then sprinkle toppings over each cup.
Whip together eggs, SIDS CRAZY SALT and milk with a fork. Pour the mixture into each tin. Sprinkle a little cheddar cheese on top of each cup.
Bake at 175°C for about 20 minutes, until the egg is cooked through.
To remove from the pan, run a butter knife around the edge of each one to loosen it from the sides, and use a fork to pop them out.
Keep them in the freezer and pop one in the microwave for a couple of minutes whenever you want a warm, yummy and filling breakfast. It is so much healthier than getting food on the go somewhere else.
Serve with a fruit and you have a nice, well rounded meal.
