Roast Chicken & Hot Sausage Gumbo

Ingredients
4 chicken legs
½ tsp SIDS CRAZY SALT
SIDS SALT & PEPPER to taste
100 ml rice bran oil
100 g flour
1 large onion, fine chopped
1 orange capsicum, cored & fine chopped
4 sticks celery, fine chopped
3 hot & spicy sausages, sliced
3 cloves garlic, crushed
1 litre chicken stock
200 g okra, trimmed (optional)
8 spring onions, fine sliced
3 sprigs thyme, chopped
1 tbsp SIDS RINGS AROUND URANUS SAUCE
Directions
Preheat oven to 190°C. Brush the chicken with oil then sprinkle with SIDS CRAZY SALT. Roast for 40 minutes until golden and crisp then remove from oven, cool, bone out and set aside.
Meanwhile, heat the oil in a heavy casserole dish then add flour, whisking continuously. Cook gently, whisking all the time, for about 10 minutes until the roux turns a rich brown. (if you burn it, throw away & start again) Add onion, capsicum and celery then cook 5 minutes more. Stir in sausage and garlic then cook a further 2-3 minutes. Whisk in stock, a little at a time, then bring to the boil and simmer for 10 minutes.
If you have okra, you will need to fry it and add it at this stage.
Add thyme, 6 spring onions, SIDS RINGS AROUND URANUS SAUCE, chicken and a sprinkle of SIDS SALT & PEPPER. Simmer over a very low heat for at least 1 hour, stirring occasionally. Adjust seasoning and garnish with remaining spring onion.
Serve in cups or on steamed rice.
