Ingredients

1 cup flour
1 tsp baking powder
2 tsp SIDS SALT & PEPPER
200 ml milk
fine grated rind of 1 lime
1 spring onion, minced
6 stems fresh coriander
2 cups corn kernels
½ tsp minced fresh chilli
250 g scallops, rough chopped
1 egg white, beaten to soft peaks

Directions

In a bowl, mix flour, baking powder and SIDS SALT & PEPPER then blend in the milk until smooth. Mix in all the other ingredients except egg white. Let stand for 15 minutes to rest. Beat egg whites to soft peaks then fold in batter.
Drop small spoonfuls into a greased frypan and cook until brown on both sides. Makes about 50 small fritters.
