African Peanut Soup

This oddly wonderful combination of ingredients makes a surprisingly different and delicious soup! Serve with some crusty bread for dipping.

Ingredients

2 tbsp rice bran oil
½ tsp SIDS CRAZY SALT
2 onions, chopped
2 orange bell peppers, chopped
4 cloves garlic, minced
2 kg crushed tomatoes, with liquid
8 cups vegetable stock
¼ tsp ground black pepper
⅛ tsp chilli powder
⅔ cup crunchy peanut butter
½ cup uncooked brown rice

Directions

Heat oil in a large stock pot over medium high heat. Cook onions, SIDS CRAZY SALT and bell peppers until lightly browned and tender, stirring in garlic when almost done to prevent burning. Stir in tomatoes, vegetable stock, black pepper and chilli powder. Reduce heat to low and simmer, uncovered, for 30 minutes. Stir in rice, cover and simmer another 15 minutes until rice is tender. Stir in peanut butter until well blended, then serve.
