Ingredients
4 duck legs
SIDS SALT & PEPPER
Orange Glaze:
2 large ripe Navel oranges
2 tbsp honey
3 tbsp soy sauce
1 tbsp SIDS SMOKEY GARLIC SAUCE
Celeriac Mash:
1 large Celeriac
2 tbsp butter
SIDS SALT & PEPPER
2 cups sautéed cabbage
1 tbsp SIDS PEPPER & GARLIC OIL, for sautéing.
Directions
Preparation:
Begin by generously seasoning the duck legs with SIDS SALT & PEPPER. Rest them in the refrigerator for about 3 hours to let the flavours infuse deeply.
In a small bowl, mix together the juice of oranges, honey, soy sauce, and SIDS SMOKEY GARLIC SAUCE. This orange glaze will enhance the duck's richness and add a lovely smokey flavour. Set it aside.
Cooking:
Preheat your air fryer to 190°C. Place the seasoned duck legs in the air fryer basket, skin side up, and cook for approximately 1 hour and 15 minutes, until the meat is tender and falls off the bone easily.
While the duck is cooking, peel and chop the celeriac, then boil in salted water until tender, about 20 minutes. Drain and mash it with butter, SIDS SALT & PEPPER until creamy.
Layer the succulent duck legs over the creamy celeriac mash, drizzle generously with the citrus glaze, and finish with sautéed greens.
