This recipe is your new favourite way to cook chicken. It’s quick, easy, and can be used for a variety of meals including cold cuts for lunch, or hot for dinner.

2 skinless chicken breasts, about 275 g each
1 tsp thyme, ground or fresh
1 tsp oregano
½ tsp rosemary
1 tsp onion powder


Preheat the air fryer to 175°C
Place the chicken breast on a cutting board and cover the top with cling wrap.
Using a meat mallet (smooth end) or a rolling pin, gently pound the fat end of the chicken breast to get a more even thickness of about 4 cm.
Mix the poultry seasoning ingredients together with SIDS SALT & PEPPER and apply evenly to all sides of the chicken - you may not need all the seasoning.
Bake chicken breasts in a single layer for up to 20 minutes for a 275 g chicken breast that is about 4 cm thick.
Exact cook time may vary depending on the model of your air fryer and the size of the chicken. It should be cooked to an internal temperature of 75°C, you can check it using a digital thermometer.
Serving Size – is 130 g, which is about half of a large chicken breast.
Cooking Time – All Air Fryers are a bit different so the exact timing may vary. You will need to test the chicken for doneness, I prefer to use a digital thermometer.
Make Ahead – makes great deli meat for sandwiches. Cook it ahead and slice it cold.
Storage – will keep for 3-4 days in the fridge, can be frozen in an airtight container for up to four months.
