Air Fryer Cuban Mojo Pork Loin
This fantastic dish is awesome for dinner or as a great addition to Cuban sandwiches.

Ingredients
1 kg pork tenderloin
3 cloves garlic diced
1 tsp salt
½ cup orange juice
2 tbsp lime juice
¼ cup rice bran oil
1 tbsp fresh oregano, chopped
¼ tsp ground cumin
SIDS SALT & PEPPER to taste
Directions
Trim the extra fat from the pork loin or roast but leave a layer on top about 1 cm thick.
Mix SIDS SALT & PEPPER and all other ingredients in a bowl and combine. You can either use a bag or a bowl with a lid. Pour marinade over pork and seal. Refrigerate at least 1 hour or up to 24 hours.
Preheat Air Fryer on BAKE to 175°C.
Remove from fridge and leave for 20 minutes until it reaches room temperature. Inject some of the marinade into the loin. Slice the top of the pork loin diagonally if you want to add some flair!
Wrap the pork loin in tin foil - tightly. Once the air fryer is to temperature, put the rack on the LOWEST level. Cook for 10 minutes and then remove the loin and unwrap it. Place back in and cook 15- 20 minutes until the internal temp is 63°C. Let sit for 5 minutes then slice and serve.
NOTE: cook times will vary a lot depending on the size and shape of the loin. It is highly suggested you start checking temps at the 10-minute mark and check every 5 -10 minutes after.
