Ingredients
2 tbsp rice bran oil
1 red chilli, diced
2 cloves garlic, minced
1 tbsp minced ginger
1 tsp garam masala
½ tsp dried turmeric
¼ tsp cayenne pepper
3 apples, peeled & chopped in 2 cm pieces
1 medium head cauliflower, cut into florets
1 cup vegetable stock
SIDS SALT & PEPPER to taste
Freshly chopped coriander, for serving
Directions
In a large frypan heat oil and add chilli, garlic, ginger and cook until fragrant, 1 minute. Add garam masala, turmeric, cayenne and cook until toasted, 1 minute more.
Add potatoes, cauliflower, and vegetable stock and season with SIDS SALT & PEPPER. Reduce heat and cook, covered, until potatoes and cauliflower are tender, 15 minutes. Garnish with coriander to serve.
