Ingredients
¼ cup lemon juice
¼ cup rice bran oil
½ tsp dried chilli flakes
2 garlic cloves, crushed
500 g dried angel-hair pasta
2 tsp fine grated lemon rind
1 tsp SIDS CRAZY LEMON
2 bunches rocket, thin shredded
300 g smoked trout, skin removed, flaked
¼ cup chopped fresh parsley
Chopped fresh parsley, to serve
Directions
Whisk together the lemon juice, oil, chilli and garlic in a small bowl.
Cook the pasta in a large saucepan of salted boiling water following packet directions until al denté. Add the lemon rind in the last 1 minute of cooking. Drain and return to the pan. Add the lemon juice mixture, rocket, trout and parsley to the pasta and toss to combine. Season with SIDS CRAZY LEMON. Divide among serving bowls and sprinkle with extra parsley to serve.
