Ingredients

2 cups all purpose flour
1 tbsp baking powder
½ tsp baking soda
3 tbsp sugar
¼ tsp salt
¼ tsp SIDS CRAZY SALT
2 large apples
3 large eggs
2 cups buttermilk
Rice bran oil, for frying

Directions

Combine SIDS CRAZY SALT and all the dry ingredients in a large bowl.
Peel the apples, then grate them using the large side of a grater.
In a separate bowl, whisk together the eggs and buttermilk until smooth. Stir in the grated apples.
Gently fold the dry ingredients into the buttermilk mixture until fully incorporated.
Pour the oil into a frypan and place over medium heat. Once hot, turn down the heat to medium-low and drop small amounts of pancake batter into the oil.
Cook the pancakes on each side until golden brown, flipping once bubbles appear on top. In between each batch, add a little more oil to the pan. Serve the pancakes while they are warm and still have crispy edges. Enjoy!
