Ingredients
3 large firm bananas
SIDS SALT & PEPPER
4 strips bacon
¾ cup apricot jam, heated
Pinch of cayenne pepper
Juice of ½ lime
12 soaked cocktail sticks
Directions
Peel and cut bananas into 3 cm slices at an angle then sprinkle with SIDS SALT & PEPPER. Cut bacon into 10 cm strips. Wrap a strip of bacon around each banana piece and secure with a stick. Squeeze lime juice over all.
Preheat oven to 200oC.
Mix cayenne pepper with hot apricot jam and brush on all the bites.
Place bites on a baking tray cover with baking paper, jam side down then brush on more jam. Roast for 10 minutes then rotate and cook other side until bacon is brown and crispy.
