Ingredients
700 g pork tenderloin
1 tbsp cajun seasoning
2 tbsp brown sugar
6 strips bacon
3 tbsp apricot preserves
¼ tsp SIDS CRAZY SALT
1 tbsp grainy Dijon mustard
Directions
Rub the pork tenderloin with the mixture of cajun seasoning and brown sugar then wrap it up in the bacon.
Heat an oven safe frypan to medium, add the bacon wrapped pork tenderloin and cook until browned on all sides, about 10-15 minutes.
Transfer the pan to a preheated 200°C oven and roast until the pork reaches 60°C, about 10-15 minutes. Brush on the mixture of the apricot preserves, SIDS CRAZY SALT and mustard near the end.
Set aside to rest, covered, for 5 minutes.
