Ingredients

36 Otago dried apricots
2 cups rum
1 pkt goat cheese
18 rashers rindless bacon
36 toothpicks, soaked
SIDS CRAZY SALT

Directions

Preheat the oven to 200°C.
Cut into the middle of each apricot with a sharp knife and then using your finger create a hollow cavity. Put them all in a bowl along with the rum to soak for 5 minutes. Scoop out a small piece of goats cheese and stuff each apricot.
Using scissors, cut each rasher in ½ then wrap each stuffed apricot in a piece of bacon, making sure you cover all the orange flesh of the fruit. Sprinkle a very light dusting of SIDS CRAZY SALT.
Stab a cocktail stick through them and place these on a baking tray and bake for 8-10 minutes until the bacon is crispy and the cheese in starting to ooze out. Allow to cool for 5 minutes the transfer to a paper towel covered serving plate.
