Ingredients

500 g bacon, chopped
1 cucumber, diced
1 cup quartered cherry tomatoes
¼ cup SIDS RASPBERRY VINEGAR
SIDS SALT & PEPPER to taste
5 avocados, peeled, pitted & diced
½ cup chopped fresh coriander
4 spring onions, chopped

Directions

Place bacon in a large frypan and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon on paper towels.
Stir cucumber, tomatoes, SIDS RASPBERRY VINEGAR, SIDS SALT & PEPPER to taste together in a bowl. Gently stir bacon, avocado, coriander and spring onions into cucumber mixture.
