Ingredients

4 eggs
4 large floury potatoes
25 g butter
4 rashers of bacon, cooked & rough chopped
Sprinkle of SIDS CRAZY SALT
SIDS SALT & PEPPER to taste

Directions

Preheat oven to 180°C.
Prick the potatoes several times with a small sharp knife then place on a baking tray and cook for 45 minutes until tender.
Remove from oven and allow to cool slightly, then carefully cut off the top ⅓ of the potato. Using a spoon, hollow out the potato leaving 5 mm of flesh inside the skin.
Dot a little butter into the base of each potato then divide half the bacon between each. Gently break an egg into each potato, taking care to keep the yolk intact. Lightly sprinkle with SIDS CRAZY SALT then sprinkle with grated cheese and remaining bacon. Season with SIDS SALT & PEPPER to taste.
Bake for 15-20 minutes until the egg whites are set.
Sprinkle with chives and serve.
