Ingredients
1 pork tenderloin, cut into 8-10 x 5 cm portions
8-10 slices thick cut bacon
1 tsp SIDS SALT & PEPPER to taste
Directions
Preheat the oven to 200°C.
Cook the bacon strips until half-cooked then wrap the medallions with a piece of bacon and secure it with a toothpick.
Cook in a hot cast iron frypan. Spoon over a bit of bacon fat onto each medallion.
Bake in the oven for 15-20 minutes. Sprinkle with SIDS SALT & PEPPER to taste.
Remove toothpicks before serving.
