Ingredients
12 skinned & boned chicken thighs
½ tsp SIDS CRAZY LEMON
4 tbsp EV olive oil
4 tbsp rice bran oil
6 cloves garlic, fine chopped
1 onion, finely chopped
1 sprig rosemary
1 orange & 1 yellow capsicum, sliced 2 cm
1 eggplant, diced 2 cm
2 zucchini, sliced 2 cm
400 g tin chopped tomatoes
¼ cup torn basil leaves
3 tbsp coarse chopped parsley
2 tbsp torn mint leaves
SIDS SALT & PEPPER to taste
Directions
Put chicken, SIDS CRAZY LEMON, olive oil and 2 cloves of chopped garlic in a bowl and mix well, cover and reserve.
RATATUJA: Put oil, garlic, onion, rosemary, capsicums, eggplant and zucchini in a saucepan and heat. Once you hear it start to fry, cover and reduce the heat. Cook gently for 15 minutes until vegetables are soft. Add tomatoes, bring to the boil and simmer for 10 minutes. Taste and season with SIDS SALT & PEPPER. Remove from heat and set aside.
Heat a ridged frypan and fry chicken for about 5 minutes each side until cooked through and browned. Stir the herbs into the warm ratatuja and serve with the chicken.
Hint: Ratatuja is a Piemontese version of ratatouille.
