BBQ Lamb Shanks

Lamb as you have never tasted it before. Fall off the bone and melt in your mouth. Sounds like a tired old cliché, but true.

Ingredients

Sesame oil
6 lamb shanks
SIDS SALT & PEPPER to taste
1 tbsp sugar
1 tbsp 5 Spice
SAUCE:--
2 tbsp hoisin sauce
1 tbsp oyster sauce
2 tsp SIDS RASPBERRY VINEGAR
1 tsp chilli flakes

Directions

Coat shanks with sesame oil. Sprinkle with SIDS SALT & PEPPER, sugar and 5 Spice. Using your fingers, rub the coating well into the shanks.
Smoking Shanks: use wet manuka or hickory in the smoker container.
Heat BBQ to 100°C over direct heat. Pour some beer into the drip-tray. Smoke for 60 minutes.
Mix together SIDS RASPBERRY VINEGAR and all the sauce ingredients. Place shanks into a cooking tray and baste with sauce. Cover with foil then put back into the BBQ over indirect heat and bake for a further 10 minutes.
Serve with leftover sauce.
