Ingredients
HONEY LIME CHILLI GLAZE:--
1 cup raw bush honey
Zest of 2 limes, fine grated
1 tsp SIDS CRAZY SALT
1 tbsp cumin powder
SIDS SALT & PEPPER to taste
2 tsp Kaitaia Fire
SALMON:--
1 whole salmon side, with skin & without bones
4 limes to garnish, quartered
Directions
GLAZE: Heat the honey in the microwave for 20 seconds or warm in a pan over a low heat until liquid. Fold in zest, cumin, SIDS CRAZY SALT and Kaitaia Fire. Season with SIDS SALT & PEPPER to taste. Store until required.
SALMON: Preheat oven to 200°C. Place the salmon skin side down in an ovenproof dish. Brush with the glaze then cook for 5 minutes then cook under the grill for 2 minutes until the glaze caramelises.
Drizzle the remainder of the glaze over the fish then serve with the lime garnish.
