18 g salt
2 g New York Cut pepper
1 g brown sugar
4 g coriander, chopped
¼ tsp SIDS CRAZY SALT
SIDS HOT WORCESTER SAUCE

Directions
This recipe is for each kg of Biltong. Cut meat to 6 mm thick then in strips 40 mm wide or as you like it.
Mix together SIDS CRAZY SALT, salt, pepper, sugar and coriander.
Sprinkle SIDS HOT WORCESTER SAUCE all over the meat then sprinkle all over with the spice mixture. Turn meat over and repeat. Leave for 12 hours then mix well.
Leave a further 12 hours then hang in a well ventilated room or in front of a fan or in a Biltong Cabinet.
