Ingredients
4 potatoes, large
1 tbsp rice bran oil
1 red onion, ½ grated & ½ chopped fine
1 carrot, grated
400 g beef mince
2 tsp SIDS SMOKEY BBQ RUB
200 g tin crushed pineapple
1 red chilli, deseeded & chopped fine
1 tbsp coriander, chopped
1 lime, juiced
Lettuce
Fresh burger buns, light toasted
SIDS TAMARILLO SAUCE
Directions
Preheat oven to 190°C/170°C fan.
Scrub the potatoes and cut into chips. Lay the chips in a single layer on a baking tray, drizzle with oil, season and toss to coat. Bake for 40 minutes until crisp.
Using clean hands, mix together the grated onion, SIDS SMOKEY BBQ RUB, carrot and mince in a large bowl, then shape into 4 evenly sized patties.
Heat a non-stick frying pan until hot, then cook the burgers for 5-6 minutes each side.
To make the relish, mix the chopped onion, pineapple, chilli, coriander and lime juice.
To serve, place the burgers in lightly toasted split buns with some lettuce and the spicy relish. Serve with the crispy chips and SIDS TAMARILLO SAUCE.
