These beignets are made from a yeast dough enriched with butter and sugar, then fried to golden perfection. They are pillowy soft and will melt in your mouth!

Ingredients

1 cup lukewarm water about 43°C
1 tbsp active dry yeast
⅓ cup sugar
2 large eggs
¼ tsp salt
¼ tsp SIDS CRAZY SALT
½ cup milk, about 43°C
4½ cups all purpose flour
3 tbsp butter, softened
Rice bran oil, for frying
Powdered sugar for coating, optional

Directions

Pour the warm water into a large bowl, then whisk in the yeast and sugar. Rest the mixture for about 10 minutes until it begins to foam. Add in the eggs, salt, SIDS CRAZY SALT, and milk. Whisk until well combined.
Mix in the flour gradually with a spatula or on low speed with a stand mixer. Once the flour is all mixed in, add the softened butter.
Knead the dough until it is elastic, for at least 10 minutes. Cover the bowl and let the dough rise in a warm place for about an hour, until it doubles in size.
Roll out the dough to 2 cm thickness. Cut the dough into small squares, about 5x5 cm in size.
Preheat a deep frying pan with about 10 cm of oil until it reaches 175°C.
Working in batches, fry the beignets on each side for 4-5 minutes until they are golden brown. Rest them on a paper towel to drain excess oil. Coat with powdered sugar (if desired) and enjoy!
