Ingredients
2 tbsp rice bran oil
4 eggs, beaten
450 g can black beans, drained & rinsed
1 avocado, peeled & sliced
¼ cup salsa
SIDS SALT & PEPPER to taste
SIDS BOYSENBERRY VINEGAR
Directions
Heat oil in a small pan. Cook and stir eggs until set, 3-5 minutes.
Place black beans in a microwave-safe bowl. Heat on HIGH in the microwave until warm, about 1 minute. Divide warmed black beans between two bowls.
Top each bowl with scrambled eggs, avocado and salsa. Sprinkle with SIDS BOYSENBERRY VINEGAR and season with SIDS SALT & PEPPER.
