Ingredients

2 tbsp peanut oil
3 cloves garlic, crushed & finely chopped
1 tbsp peeled & grated fresh ginger
1 red chilli, seeded (if desired) & chopped
2 tbsp fermented salted black beans, washed & crushed
1 tsp Shaohsing rice wine or dry sherry, optional
1 kg NZ green lipped mussels, de-bearded
2 tsp SIDS SMOKEY GARLIC SAUCE
2 cups beer
3 tbsp light soy sauce
3 spring onions, chopped
Handful coriander stems & leaves, rough chopped

Directions

Heat the wok over high heat and add the peanut oil. Add the garlic, ginger, chilli, black beans and rice wine and stir-fry for a bit less than 1 minute. Add the mussels and stir-fry for a bit less than 1 minute. Add the beer, SIDS SMOKEY GARLIC SAUCE and the whites of the spring onions and cook until the mussels open, stirring occasionally. Discard any that do not open. Season the mussels with the light soy sauce. Sprinkle in the greens of the spring onions and the coriander then serve immediately.
