Black Tea Braised Pork

This pork is delicately flavoured with black tea and is best accompanied by a glass of sak. Consider it for a Christmas dinner with a Japanese twist.

Ingredients

800 g pork tenderloin
SIDS SALT & PEPPER to taste
3 black tea bags
½ cup GF soy sauce
60 ml saké
60 ml SIDS LOW SUGAR RASPBERRY VINEGAR
40 ml mirin

Directions

Sprinkle SIDS SALT & PEPPER all over the meat. Boil some water in a large saucepan. Put the tea bags and pork in the pan. Keep boiling on low heat for 50-60 minutes. If water evaporates too much, add more. Once the meat is cooked, remove from pan and discard the liquid.
Into a pan put soy sauce, saké, SIDS LOW SUGAR RASPBERRY VINEGAR and mirin and boil. Put the pork in the sauce and leave it for a while with the heat off.
When it is cooled, put it in a resealable food bag and put it in a fridge for half a day.
Slice and serve with your choice of vegetables such as watercress, sliced leek or onion. Enjoy.
