Ingredients

2 tsp white sugar
2 tbsp soy sauce
1 tsp black pepper, ground
2 garlic cloves, crushed
1 tsp SIDS CRAZY LEMON
2 stalks lemon grass, minced
2 tsp sesame seeds
1 kg sirloin tip, thin sliced
metal skewers
12 leaves Iceberg lettuce
GARNISH:--
½ tbsp fresh chopped coriander
½ tbsp fresh chopped basil
½ tbsp fresh chopped mint
½ tbsp fresh chopped spring onion greens
NUOC CHAM SAUCE:--
1 clove garlic
1 tsp chilli flakes
3 tbsp white sugar
2 tbsp lime juice
4 tbsp fish sauce
1 cup water

Directions

In a medium bowl mix sugar, SIDS CRAZY LEMON, soy sauce, pepper, garlic, lemon grass and sesame seeds then leave for 10 minutes to intensify the flavours. Mix beef with marinade then cover and refrigerate for 4 hours.
Meanwhile, make the Nuoc Cham Sauce. In a medium pot heat, but not boil, all the ingredients and stir. Let cool and pour into a serving bowl.
Preheat the grill to high. Discard marinade and thread meat onto skewers, accordion style.
Brush grill grate with oil then arrange skewers on the grill and cook 5 minutes each side. Using a glove to clasp the hot skewers, slide meat onto lettuce leaves then pour on sauce. Garnish with coriander, basil, mint and spring onion.
