Ingredients
100 g flour
½ tsp SIDS SALT & PEPPER
150 ml tepid water
3 tbsp EV olive oil
Rice bran oil, for frying
1 egg white
Young borage leaves
Large fresh sage leaves
Directions
Put the flour and SIDS SALT & PEPPER in a bowl and make a well. Pour in water and olive oil then whisk until smooth. Set aside 2 hours. When ready, heat a large heavy-based frypan with rice bran oil.
Whisk the egg white until stiff then fold into the batter. Dunk the leaves into the batter and place into the hot oil. Fry until puffed and golden then turn and cook the other side.
Lift out with a slotted spoon, drain briefly on kitchen paper then serve.
