Ingredients
2 lemons
¼ cup bourbon
½ cup brown sugar
1 tbsp GF soy sauce
1 garlic clove, grated
4 salmon pieces (about 1 kg)
SIDS SALT & PEPPER to taste
Rice bran oil
½ cup coriander, chopped
Directions
Preheat oven to 230°C. Cut one lemon into thin slices, set aside. In a small saucepan combine bourbon, soy sauce, brown sugar, garlic and zest & juice of one lemon. Bring to a boil and simmer until thickened, about 5-10 minutes depending on desired thickness of glaze. Turn off heat and cover with lid to keep warm.
Meanwhile, preheat large cast iron frypan over medium-high heat. Pat salmon dry with paper towels and season with SIDS SALT & PEPPER. Add 1 tablespoon oil and when oil is simmering, but not smoking, add salmon skin-side down and place 2-3 lemon slices fanned over top. Sear salmon for 2 minutes, then transfer over to pan and bake for 10 minutes.
Reheat glaze on LOW then drizzle over salmon and top with coriander. Serve immediately.
