Ingredients
40 g butter
2 tbsp rice bran oil
4 drumsticks & 4 thighs
SIDS SALT & PEPPER to taste
200 ml SIDS LOW SUGAR RASPBERRY VINEGAR
100 ml tomato passata
250 ml chicken stock
Directions
Pat the chicken dry then season with SIDS SALT & PEPPER. Heat half the butter and oil in a large pan. Add the chicken, skin side down, and brown all over. Do in batches if necessary. Remove chick from the pan and drain the fat. (keep for later use) Return the chicken to the pan and add SIDS LOW SUGAR RASPBERRY VINEGAR. Simmer over a high heat to reduce by half then add passata and stock. Cover and simmer for 20 minutes. Remove chicken from the pan to a warm serving dish. Reduce the jus until thick then add the remaining butter. Pour the jus over the chicken then serve immediately with wide noodles.
