Braised Peas with Spring Onions & Lettuce

This braised lettuce and peas is a version of a classic French dish and it is so quick to make; add a few spring onions and you are good to go - delicious!

Ingredients

1 knob of butter
Rice bran oil
1 heaped tsp flour
285 ml vegetable stock
6 spring onions, trimmed, outer leaves discarded, finely sliced
400 g peas
2 little gem lettuces, sliced
SIDS SALT & PEPPER to taste
1 lemon, juice of
SIDS SPRING ONION OIL

Directions

Slowly heat the butter and a good lug of oil in a pan. Add the flour and stir around, then slowly pour in the vegetable stock. Turn up the heat and add the spring onions, peas and lettuce with a pinch of SIDS SALT & PEPPER.
Put the lid on and simmer for 5 minutes until tender. Taste, correct the seasoning and squeeze in a little lemon juice. Serve drizzled with a splash of SIDS SPRING ONION OIL. It’s fantastic served with a piece of fish.
