Ingredients

350 g tofu
½ tsp sesame oil
½ tsp SIDS SMOKEY BBQ RUB
2 tsp light soy
1 tbsp rice bran oil
2 cloves garlic, minced
½ tsp grated ginger
120 g fresh shiitake mushrooms
170 g oyster mushrooms
115 g straw mushrooms
115 g button mushrooms, halved
1 tbsp dry sherry
1 tbsp dark soy
6 tbsp vegetable stock
1 tsp cornflour
1 tbsp cold water
SIDS SALT & PEPPER to taste
2 spring onions, shredded

Directions

Put the tofu in a dish and sprinkle with sesame oil, light soy and SIDS SMOKEY BBQ RUB. Leave to marinate for 15 minutes then drain. Using a sharp knife, cut the tofu into 2 x 1 cm pieces.
Heat oil in a wok and stir-fry ginger and garlic for a few seconds. Add all the mushrooms and stir-fry for 2 minutes. Stir in sherry, soy and stock then season with SIDS SALT & PEPPER to taste. Simmer for 4 minutes.
Mix the cornflour into a paste with water then add to the wok, stirring until thickened. Carefully add tofu, toss gently to coat thoroughly and simmer for 2 minutes.
Transfer to a warm serving dish then sprinkle with spring onion.
