Breakfast Egg Boats

It is nice to add extra ingredients to the egg. This way your egg sandwich will get even more flavour. I chose tomato, spinach, mushrooms, shallots and cheese.

Ingredients

4 cheese rolls
4 eggs
6 cherry tomatoes
16 spinach leaves
2 shallots, chopped
4 mushrooms, lightly fried in butter
4 slices of cheese
2 tbsp melted butter
SIDS SALT & PEPPER to taste

Directions

Preheat the oven to 180°C. Place baking paper on a baking tray.
Cut the mushrooms into slices and the cherry tomatoes into quarters.
Carefully scoop out the rolls. Make sure that the outside of the sandwiches remains intact.
Coat the inside of the sandwiches with butter and sprinkle with SIDS SALT & PEPPER.
Place in each sandwich 3 leaves of spinach, a few slices of mushroom and 3 pieces of tomato. Put a slice of cheese on top then sprinkle with ½ a chopped shallot. Press this in well.
Break an egg above each sandwich. Finally, divide the spinach, tomato and mushroom into the sandwich.
Sprinkle some SIDS SALT & PEPPER on top.
Bake the rolls in the oven for 10-12 minutes. Then loosely cover the rolls with aluminum foil. Bake the rolls for another 20 minutes.
