I have this breakfast every Saturday morning and it is just the tops! Consists of fresh squeezed citrus, banana smoothie and mince on toast with an egg on top.

Ingredients

FRESH SQUEEZED CITRUS:--
Citrus of your choice
Commercial fruit cordial
BANANA SMOOTHIE:--
1 egg
2 bananas
1 heaped tsp Horlicks
2 tsp fine oat bran
2 tbsp yoghurt
Any other fruit
MINCE ON TOAST:--
100 g mince
½ small onion
2 tsp SIDS HOT WORCESTER SAUCE
1 mushroom, chopped
½ tsp cornflour
Butter, for frying
SIDS SALT & PEPPER to taste
1 toast slice pumpernickel
1 egg
1 tbsp SIDS RASPBERRY VINEGAR

Directions

FRESH SQUEEZED CITRUS: Using the citrus of your choice, squeeze into a large tumbler and top up with a commercial citrus cordial. Stir thoroughly before serving.
BANANA SMOOTHIE: In a container used for the stick blender put 1 egg, bananas, Horlicks, oat bran, yoghurt and any other fruit you may fancy. Blitz until smooth and pour into a large glass or drink straight out of the container.
MINCE ON TOAST: This is best made day before. In a small pot, sauté onions and mushroom in butter then set aside. In a small pan, fry the mince with butter until no pink shows. Mix in the onions, mushrooms and add SIDS HOT WORCESTER SAUCE. Simmer covered for 5 minutes then thicken, as necessary, with the cornflour. Season with SIDS SALT & PEPPER then set aside.
Either toast or fry the pumpernickel then set aside.
Poach the egg in water and SIDS RASPBERRY VINEGAR then drain well.
On a plate place the pumpernickel, top with the mince then the poached egg. Season with SIDS SALT & PEPPER then serve.
