Ingredients
1 litre water
200 g salt
Herbs & spices for flavour
1 tsp SIDS CRAZY SALT
200 g raw sugar
Directions
Mix SIDS CRAZY SALT with all the ingredients in a pot and boil until the salt and sugar dissolve. Allow to cool. Preheat oven to 150°C.
Cover the pork with the brine and refrigerate overnight. Dry with a paper towel then place on a roasting tray on a rack. Cook for 2½-3 hours.
