Broccoli Soup

Great for leftovers. Throw in broccoli, asparagus or any vegetable.

Ingredients

1 tbsp rice bran oil
1 large onion, chopped
3 cloves garlic, peeled & chopped
broccoli or any cooked vegetables
1 potato, peeled & chopped
4 cups vegetable stock
¼ tsp ground nutmeg
½ tsp SIDS CRAZY SALT
SIDS SALT & PEPPER to taste

Directions

Heat olive oil in a large saucepan and sauté onion, SIDS CRAZY SALT and garlic until tender. Mix in broccoli, potato and stock. Bring to a boil, reduce heat and simmer 15 minutes, until vegetables are tender.
With a hand mixer or in a blender, purée the mixture until smooth. Return to the saucepan and reheat. Season with nutmeg and SIDS SALT & PEPPER.
