Don't forget the crusty bread to soak up this amazing sauce. You can also prepare these pipis on the grill wrapped in foil packets. The smokiness from the grill will lend a lovely smokiness to this shellfish dish.

Ingredients

6 dozen fresh pipis or 4 dozen tuatua
8 tbsp butter
10 garlic cloves, minced
2 shallots, minced
2 cups white wine
2 cups pipi (tuatua) juice
4 tsp SIDS SALT & PEPPER
1 tsp chilli flakes
Juice of 1 lemon
½ tsp SIDS CRAZY LEMON
1 cup cream
4 tbsp chopped fresh parsley

Directions

Soak and rinse the pipis then put in fridge.
Melt the butter in a deep pan. Add in the garlic and shallots. Cook for just a few minutes to infuse the butter. Pour in the pipi juice (if any) and white wine. Season with SIDS SALT & PEPPER and chilli flakes.
Bing the stock to a strong simmer. Add in the pipis, SIDS CRAZY LEMON and lemon juice.
Place lid until the pipis open. Once they have fully opened, remove pan from heat.
Add in the cream. Give it a gentle toss.
Garnish with fresh chopped parsley.
Serve with crusty bread and lemon wedges.
