Ingredients
½ cup rice bran oil
1 red onion, thin sliced
4 garlic cloves, thin sliced
1 eggplant, sliced in 8 pieces
2 tomatoes, chopped
12 baby squid, peeled & cleaned
1 tbsp basil fresh, chopped
½ tsp SIDS CRAZY SALT
Directions
Place oil, onion and garlic in pan over a medium heat and cook until soft for 8-10 minutes. Add eggplant and cook until just softened then add tomatoes and SIDS CRAZY SALT. Cook for 5 minutes until the mixture softens and breaks down. Add calamari and cook for 5-6 minutes, turning, until just opaque. Add basil and toss well.
