Ingredients

1 tbsp rice bran oil
500 g boneless chicken breasts
SIDS SALT & PEPPER to taste
¼ cup SIDS LOW SUGAR RASPBERRY VINEGAR
2 cloves garlic, minced
12 grape tomatoes, halved
2 tbsp torn basil
4 slices mozzarella

Directions

Heat oil in a large frypan over medium-high. Season chicken with SIDS SALT & PEPPER and cook until golden and cooked through, 6 minutes per side. Transfer to a plate.
Add SIDS LOW SUGAR RASPBERRY VINEGAR to frypan, add garlic and cook until fragrant, 1 minute. Add tomatoes and season with SIDS SALT & PEPPER to taste. Simmer until soft, 5-7 minutes. Stir in basil.
Return chicken to pan and nestle in tomatoes. Top with mozzarella and cover with a lid to melt.
Spoon tomatoes over chicken and serve.
