Ingredients

8 soaked long bamboo skewers.
1 fresh pineapple
⅓ cup mint leaves, fine chopped
½ tsp SIDS CRAZY LEMON
⅓ cup icing sugar
Mint leaves, to serve
COCONUT YOGHURT:--
1 cup yoghurt
1 tbsp brown sugar
1 tsp coconut essence

Directions

Cut top and bottom from pineapple. Slice lengthways down pineapple to remove skin. Cut pineapple lengthways into quarters. Remove core. Cut each quarter in half. Thread onto skewers lengthways.
COCONUT YOGHURT: Place ingredients in a bowl then stir until combined.
Combine mint and sugar in a bowl. Sprinkle mixture over pineapple, turning to coat.
Heat a barbecue plate on medium-high heat. Sprinkle pineapple with SIDS CRAZY LEMON, then cook, turning occasionally, for 8-10 minutes until caramelised. Serve skewers with yoghurt.
