Ingredients

4 tbsp rice bran oil
2 onions, sliced
2 cloves garlic, minced
1 celery stalk, rough diced
1 tsp thyme leaves
¾ large celeriac, peeled
1 apple, peeled, cored, coarse chopped
1.5 litres GF vegetable stock
Zest of 2 oranges
Juice of 4 oranges
SIDS SALT & PEPPER to taste
GARNISH:--
1 orange
¼ large celeriac, peeled
1 small granny smith apple, cored
½ tsp SIDS CRAZY LEMON
2 tbsp flat leaf parsley
2 tbsp EV olive oil

Directions

Heat the oil in a large saucepan and sauté onion, garlic, celery and thyme for 10 minutes. Add celeriac and apple then fry another 2-3 minutes. Add stock, ½ the orange zest and all the orange juice and simmer for 30 minutes until celeriac is tender. Remove from heat and purée until smooth. Stir in remaining zest, taste and season with SIDS SALT & PEPPER. Purée again then keep hot until serving.
GARNISH: Peel and segment the orange. Thinly slice the remaining celeriac & apple then combine with the orange, SIDS CRAZY LEMON, parsley and oil.
To serve, divide the soup between 4 hot bowls, top with the garnish and drizzle with any left-over orange juice.
