Ingredients
1 red capsicum
1 orange capsicum
1 yellow capsicum
2 tbsp EV olive oil
1 tsp crushed garlic
½ tsp SIDS CRAZY SALT
1 chicken breast, cut in strips
4 wraps
½ cup SIDS HONEY MUSTARD VINAIGRETTE
2 cups baby spinach
Lemon wedges, for serving
Directions
Cut capsicums in half, clean out seeds and slice into strips.
Combine oil, garlic and SIDS CRAZY SALT. Place chicken and capsicum in a shallow dish then pour over the marinade and toss to coat evenly. Cover and put in fridge for 1 hour.
On a chargrill pan or BBQ, cook capsicum and chicken for 4-5 minutes until tender and coloured.
Lay out wraps and spread with SIDS HONEY MUSTARD VINAIGRETTE. Arrange a few spinach leaves on each wrap and top with capsicums and chicken.
Fold each wrap into a cone and secure with a toothpick.
Serve with lemon wedges and extra SIDS HONEY MUSTARD VINAIGRETTE.
