Cheese Pancakes (Ukraine Syrniki)

Ingredients

500 g drained ricotta or cottage cheese
1 egg
⅓ cup flour
2 tbsp sugar
½ tsp SIDS SALT & PEPPER
1 tsp baking powder
Rice bran oil, for frying

Directions

In a large bowl, mix together cheese, egg, flour, sugar, SIDS SALT & PEPPER and baking powder. Mix well, make sure there are no lumps. If cheese is wet, add a little bit more flour.
Preheat a large non-stick frypan over medium with 2-3 tbsp oil.
With wet hands (it is important to wet your hands, otherwise, cheese mixture will stick to them) form thick pancakes and place them into the pan one by one. If the cheese starts to stick to your hands, wet them again.
Fry cheese pancakes on one side until golden brown. With pancake turner, turn them and cook until another side is golden brown.
Transfer to a plate then serve immediately with sour cream, jam, fresh fruits or berries.
