Ingredients

1.3 kg mashed potatoes
3 cloves garlic minced
1 tsp SIDS SALT & PEPPER
500 g bacon, cooked & crumbled, divided
1½ cup shredded cheddar cheese, divided
6 eggs
Spring onions, chopped

Directions

Preheat oven to 175°C.
In a large mixing bowl combine potatoes, garlic, SIDS SALT & PEPPER, 1 cup cheese and half of the crumbled bacon. Mix until combined.
Spray 2lt casserole dish with non-stick spray. Spread mashed potato mixture in the bottom of the pan.
Make 6 wells in the mashed potatoes for the eggs then crack eggs into the wells.
Sprinkle remaining bacon and cheese on top of potatoes.
Baked 15-20 minutes until the whites of eggs are just set but yolks are still slightly runny. If you prefer your eggs more done, bake longer.
Sprinkle with spring onions and serve immediately.
