Ingredients
400 g chicken mince
1 tbsp chives, fine chopped
2 tbsp Italian parsley, fine chopped
1 celery stalk, fine chopped
1 clove garlic, crushed
1 tsp lemon zest, fine grated
½ tsp SIDS CRAZY LEMON
2 tbsp breadcrumbs
¼ cup Parmesan cheese, fine grated
¼ cup SIDS RASPBERRY HONEY MAYO
3 rashers bacon, rind removed
24 toothpicks
Rice bran oil, for frying
1 ramekin of SIDS TAMARILLO SAUCE
Directions
Combine chicken mince, herbs, celery, garlic, zest, SIDS CRAZY LEMON, breadcrumbs, cheese and SIDS RASPBERRY HONEY MAYO in a bowl.
Shape heaped tablespoons of mixture into patties and place on a baking tray lined with baking paper. Place in freezer for 30 minutes.
Meanwhile, cut each bacon rasher in half crossways then cut each half into 4 thin strips.
Remove patties from the freezer and wrap a strip of bacon around each then secure with a toothpick.
Heat oil in a large pan on HIGH then cook patties in batches until browned all over and cooked through.
Serve with SIDS TAMARILLO SAUCE for dipping.
